Sometimes meal ideas are born out of an equal desire for good food and convenience. We love pizza. Who doesn't? We love quick and easy recipes. Enter mini flatbread pizzas using the Ninja Foodi.
Not only is this one fast and easy, it barely uses any power and it can be made for lunch or dinner. One bonus we love about this recipe is that naan, pita, or any other available flatbread can make a great substitute for pizza dough. They're already fully baked, so everything just needs a few minutes to get hot, no fussing over traditional dough. And, even on the road, we've been able to find these flatbreads in just about every grocery store.
Now, putting together a pizza isn't exactly rocket science, but this is one of our favorite combinations so we thought we'd share it for inspiration. Obviously, you can add or subtract your favorite toppings to taste, or just create your own mini pizza.
If you are doing it in a Foodi (which we highly recommend), you'll have to bake in a couple batches, since only two will fit. If you're baking in an oven, you could load them all on one sheet pan.
BBQ Chicken Flatbread Pizzas
Ingredients
12 mini flatbreads (our favorite are Stonefire naan rounds)
1/2 cup BBQ sauce
2 cups rotisserie chicken
1 small chopped red onion
1/4 cup bacon bits
1 cup shredded cheddar
1/4 cup chopped green onion
Instructions
- Shred the rotisserie chicken
- Assemble each pizza with ingredients in the order listed above
- Bake on 340° in Ninja Foodi for 4 minutes. If using an oven, preheat, then use same cooking time
